The official inauguration of the new Orobianco restaurant was held on April 5, led by Paolo Casagrande. The event was attended by a variety of notable individuals, including chef Martín Berasategui, and members of specialized media who had the opportunity to taste a special menu served during the evening. Despite being open for a few months, various changes were made to the menu and establishment leading up to the official opening, which was held with stunning panoramic views of Calpe.

This private celebration was attended by some of the most influential gastronomic media in the province such as Revista Sobremesa, Almanaque Gastronómico or Alicante Gastronómica, personalities and friends, including chef Martín Berasategui, the Spanish chef with the most Michelin stars in national territory with twelve stars. . Chema and Irene García from La Finca (Elche), Kiko Moya, chef from L’Escaleta (Cocentaina), Rafa Soler from Audrey’s (Calpe), Gema Amor, president of Alicante Gastronómica or Alejandro Roda and Maje Martínez from Mediterránea Gastrónoma, also attended. among others.

Italy and the Mediterranean on every plate
During the inauguration, the guests were able to taste a special menu with different dishes that make up Orobianco‘s gastronomic proposal. Flavors of Italy and Mediterranean products wrapped in the most avant-garde techniques. Very visual dishes in their color compositions and elegant contrasts that delight the most demanding palates. All with a gastronomy close and respectful, always looking for local products as much as possible.
The first pass on the menu is squid, almond, cured yolk and guanciale tartare. The cured yolk with Marsala wine and soy contributes to the creaminess of the whole. Some small counterpoint of creamy almond, as if it were a nougat, finally links it to the land of Alicante.

The second pass is Fusillone of pink grapefruit, galley and Oscietra caviar. The acid flavors of grapefruit appear in the aftertaste and are nuanced with those of the intense flavor of caviar.
A burrata, lobster, ham and basil ravioli completes this sequence. A dish paired with a Rossj Bass 2021 from Bodegas Gaja, comes from Langhe Piemonte to make his homeland in this Italian branch.
The culmination of this inaugural menu comes from the hand of a Venetian pigeon, liver-based sauce and textured poached onion, cream of parsley, onion and toasted flour. A Property, from old Palacios-Remondo vines, from the Eastern Rioja, crowns this dish.

Fresh pre-dessert based on lemon, lime, mint and green apple peel ice cream. And a dessert with creamy coffee, cocoa, licorice and raspberry from the hand of a Fondillón Primitivo Quiles solera 1948, with an acidity that contrasts with the sweetness of the desert.
In short, an event that allowed the guests to appreciate this unique venue first-hand, a project in which the personality of the chef, the history of a unique gastronomic establishment and a setting with incomparable views merge. An iconic place that collects part of the gastronomic history of our land and that has been adapted and adapted to be visited and contemplated in an exceptional way.
