AlmaMater, a Michelin Star restaurant located in Murcia, is the personal project of chef Juan Guillamón. The restaurant is known for its creative and constantly evolving market cuisine, rooted in traditional gastronomic culture and enriched by Juan’s personal and professional experiences.
Juan’s passion for cooking began when he started working in the kitchens of the Natural History Museum in London. After completing his culinary studies, he continued to train with renowned chefs at La Cabaña Buenavista, Flanigan, El Portal del Echaurren, Arzak, and Calima. He then worked for the Ferrari Formula 1 team and later as head chef in restaurants in Madrid and Las Palmas de Gran Canaria, doing internships in top-notch restaurants such as Ricard Camarena, Kabuki, and Dom.
Juan opened AlmaMater in April 2019, and since then, the restaurant has received numerous accolades and recognition. Juan was a Finalist for the Madrid Fusión 2021 ‘Revelation Chef’ Award and AlmaMater was awarded 1 Sol from the Repsol Guide and a recommendation from the MICHELIN GUIDE. Juan was also named Best Chef in the Region of Murcia at the 2021 Gastronomy Awards of the newspaper La Verdad.
