This restaurant opened its doors about twenty-eight years ago and at that time it was run by Karen O’Neill a lady from Liverpool from whom Sandra Garcia (the current chef and co-owner) would learn years later about cooking and something equally or more important which is the respect for the customers.
It was in 2007 when Sandra started working with this lady and learn much of the fundamentals that Olive Tree has today, that love for a job well done, the passion for a careful service, and the care to always offer quality products, fresh and prepared at the time.
Seven years later Sandra and her husband (don’t know the name) decided to run the restaurant encouraged by what their former manager had taught them and by her retirement because she did not want to continue.
From then on, Olive Tree began to create its own philosophy to what it is today; a restaurant where you will find an authentic, quality, and fresh homemade food that is always concerned with customer satisfaction, committed to offering excellent service, innovation as well as new techniques and trends in the kitchen.
It is a restaurant where you can breathe the passion that Sandra Garcia of leaves latent every day. She discovered her passion for cooking through the joy of seeing others enjoy what she used to cook so that is where the concept of this unique restaurant was born; the dedication and determination to grow every day and make others enjoy and be happy around a table.
In addition, her impressive training in some of the most renowned gastronomy schools in the world such as Tony Botella haute cuisine and vacuum packaging, Basque Culinary Center in San Sebastian (cooking techniques, plating, and molecular cuisine) have led Olive Tree to its recognition.

The restaurant is split into two main areas: a large dining room with high ceilings and tables laid out in an informal alfresco style, and a smaller more intimate area downstairs with low lighting and soft carpets.
