Dvora Gastro Bar Benidorm: With spectacular Mediterranean views and a unique gastronomic adventure, you’ll want to return again and again!

In the two years since its opening, D.Vora Gastrobar has earned a reputation as one of the best fine dining establishments in Benidorm. Our CEO at Spain Life Exclusive headed there recently to see what everyone was talking about it, and we have to tell you we are so jealous, having seen the pics and heard the praise for the food. We all think we need to go and get a second opinion, but in the meantime, here’s our report on this fabulous place.

 

The Setting:

The stunning setting is a great start to the D.Vora Experience, especially if you are lucky enough to be seated on the seaward terrace, overlooking the Levante and Poniente Beaches. D.Vora is situated amid the stunning architecture of the Castell de Benidorm, bridging the iconic Old Town and the modern, lively Levante area. Enjoy the romantic views while cocooned in D.Vora’s classy, elegant yet casual ambience. It’s a place to make memories and build dreams, and you’ll want to return as often as possible.

 

From the moment you step into D.Vora, you feel special, and above all, safe. All appropriate hygiene protocols are in place, including socially distanced dining, temperature checks and sanitising stations. In these challenging times, it’s a real tonic to go somewhere where you can enjoy a meal in safe surroundings, with the sights and sounds of the sea as a backdrop.

 

 

The Chef:

Linking the old and new areas of the town is appropriate, because Chef de Cuisine Carlos Ribes Arago fuses classic French cuisine with aspects of Mediterranean and Asian gastronomy, frequently going outside the box to bring you wonderful new flavours which will surprise and delight you in equal measure. Carlos specialises in unique sauces, which is hardly surprising, since he worked for several years with French chef Jean Marc Sanz, of the Hotel Montiboli, Villajoyosa.

 

At D.Vora, Carlos creates all his own dishes with fresh, locally sourced ingredients from a Mediterranean basis, and there is a suggestions menu each week to choose from, with six or seven starters and main courses. His cuisine and his wonderful way with ingredients are on a par with a Michelin starred chef, and you will not believe it’s possible to experience so many flavours during a single meal, all blending or contrasting in a perfectly harmonious symphony of the senses.

 

The staff are just as passionate about good food as the chef, and they will recommend new food adventures for your tastebuds, while taking into account your particular likes and dislikes.

D.Vora’s food is both plentiful and beautifully presented, with some surprising combinations of flavours that work really well. The Quinoa Tabouleh Tzatziki is a mix of cous cous, cheese, fruit and grilled corvina, which is a firm white sea fish similar in texture and flavour to cod. If that’s a little too adventurous for you, why not try the king prawn salad with creamy parmesan? It’s an interesting twist on a classic starter. Our tasters were impressed with both dishes, and would be happy to recommend them to anyone, with a word of warning to arrive hungry, as the servings are very generous.

They were spoiled for choice for mains, as everything sounded wonderfully original, but they settled for crispy cod, and pork with sweet potato and caramelised onion. With three different sauces and several complementary flavours from the accompaniments, the cod is a true fusion of flavours, and comes highly recommended. As for the pork, the verdict was, it’s the best ever!

 

We thought our tasters were running out of superlatives, but no, there was more to come!  All the desserts are produced in house, and again, there’s a good range of choice, with some unusual combinations. The pear and apple strudel with white chocolate and rum sauce was ‘Heaven, and a fabulous finale to the meal,’ according to our tasters, while the creamy gorgonzola and goat’s cheese cheesecake with crumble ice cream was ‘Truly exquisite.’
