BonAmb Kicks off the New Culinary Season with “L’Encesa”

Two-time Michelin star holder BonAmb surprises with the opening of its new culinary season, in the form of “L’Encesa”. 

Best described as an “ode” to the Mediterranean, two-time Michelin star restaurant BonAmb in Jávea, Alicante has recently reopened the restaurant inspired by “L’Encesa” – a season filled with light after a dark period.

Taking advantage of its privileged setting next to the Bay of Jávea, a BonAmb is an exquisite place with its own garden and wide views of the Montgó, and the typical orange grove landscape. BonAmb prides itself on serving the best fish and delicious fresh seafood from the market. The restaurant’s design itself consists of a fresh and elegant gastro bar space, inspired by the ocean. 

The restaurant oozes fine taste, with a very elegant and contemporary interior, without renouncing the Mediterranean look so typical of the region. 

In only 5 years, they’ve achieved the impressive feat of being awarded 2 Michelin Stars and 3 Repsol Suns, under the leadership of Chef Alberto Ferruz. 

This year, the restaurant has been able to maintain its two stars at the Michelin Guide Gala, held in Valencia.

2022 Season – L’Encesa

This year, BonAmb pays homage to the encesers, the brave countrymen who have kept the fishing tradition in the area alive. 

The term L’encesa refers to the professional fishermen that practice the millenarian fishing art that was carried out in the cliffs of the Marina Alta. It consisted of pointing light

shone over the sea in order to attract high-value fish into the net – hence, where the inspiration has come from. 

Despite the setbacks that came with the 2020 pandemic, the spirit of BonAmb has remained unwithered. This is thanks to its pillars of simple yet delicious, Mediterranean style cuisine, and their dedication and commitment to excellence. 

The restaurant draws on the essence of the Marina Alta as its main source of inspiration, the establishment has proven to be an emblematic restaurant in the Alicante province, and most diners will agree that it sticks out in the mind as a traditional, home-made staple food. 

Located in a beautiful, 140-year-old country house in the Pamis area of Ondara, BonAmb is immersed in a stunning setting of orange and olive trees. As you enter the area, you feel overcome with the scents of jasmine and orange blossom, which is reminiscent of the Valencia spirit. 

This season, diners will be treated to a choice of three menus with or without wine pairings, named Cabàs, Canyís and Ham. They are ranked from the lowest to the highest number of dishes.

The courses of each menu are specially elaborated to take diners on the same route that the encesas used to take, from the fields and orchards of the Marina Alta to the Mediterranean Sea.
